That’s a tough one… there have already been cupcakes, pizza,, chicken and burgers. Sandwich places are becoming popular here in California.
Maybe… flavored popcorn? I know there are kettle corn trucks, but I’m thinking a 31 flavors kind of place?
In any case, whoever finds the magic food will make a ton of do re mi! : )
